Used mainly as an emulsifier in the production of mayonnaise or tartare. Also suitable as an enriching agent in savoury pastries. The product consists of fresh liquid yolk separated from domestic hen eggs, are standardised with whole egg or egg white to a solids of 38%, blended, pasteurised and then blast frozen. 1kg of Frozen Pasteurised Egg Yolk Reduced Solids once thawed is equivalent to the amount of yolk separated from approximately 50 medium sized eggs.
