My craziest culinary experience…

My family and I were travelling through Greece. We took a shortcut over some pretty scary mountains and hadn’t eaten in over four hours when we came across a tiny fishing village. We went to the local restaurant – there was no-one else there except our family. They didn’t have a menu, they just fed us whatever they had that was fresh and local. To this day it’s one of the best meals we’ve ever eaten, and something my family still talks about.

Wholegrain Milling flour! I love that it’s produced from Australian-grown grains and that they mill everything themselves. I love making woodfired pizza with their flour.

Race car driving – I try to get to the track once a month. And boating and fishing – I love going out on the boat to catch and cook my own fish.

Being in Africa and eating with local villagers out in the wilderness at a game reserve. It was the most incredible experience being out under the stars and eating what the land provided.

My craziest culinary experience…

Many years ago I won a trip to the World Cup Pastry Competition in Lyon. Savoury basil and chocolate canapes, and some of the most unique raw seafood still loom large in my memory. As did the underground pop-up bar we were sent to one night after dinner. On arrival they sabered the bottom of your champagne glass off. You couldn’t put your glass down and you couldn’t fall down as the floor was littered with glass shards. Take me back.

I am a creature of habit. Every morning I have the same thing – Meredith dairy pot set yoghurt, Malfroys Poly Flora Honey and whatever seasonal fruit is available. I’m also a firm believer in ‘unicorns’ – exceptional products people don’t think are possible, but our very talented producers manage to produce. Long Paddock Special Reserve Banksia is one of these.

My craziest culinary experience…

Whilst in the South of France and thinking the mysterious caves of Roquefort cheese would not be far away whilst looking at a map, we set out to visit and found an hour drive turned out to be 3 hours through some very steep and windy mountain roads (steep by Australian standards) – finally arrived and toured the Société cheese caves and learned about how the cheese came about. Followed by visiting almost every Roquefort producer (which is just on one street, and each with their own unique cheese cave). Of course, we got to try some of the moldiest, raw milk cheeses that would never be allowed in Australia.

Anything from Vannella is world class, Burrata or Stracciatella are my favorites, both are so clean and fresh. For me serve simply with in season fresh tomatoes, quality EVOO and vinegar. Each will always wow the table! Both so universal.

My craziest culinary experience…

A few years ago, I was lucky to score a table for dinner at Vuurtoreneiland – a teeny tiny island to the east of Amsterdam that’s home to the city’s last lighthouse. It was the dead of winter and as we arrived on the island (via a decommissioned ferry from the 20s!) we were greeted by the whole kitchen staff, who handed us candle lanterns to help us get around what was otherwise a pitch-black island. After a tour and some stargazing, we settled into the dining room which was inside an old bomb shelter, to enjoy an incredible nose-to-tail-style feast celebrating produce grown on the island. Unforgettable!

Travelling 6 hours via bullet train between lunch and dinner, just to dine at an ichigen-san okotowari (introduction only restaurant) in Japan. It was worth it though because it was one of the top 5 meals I’ve had in my life and extremely difficult to get a reservation for.

While all my other team members have chosen some amazing products that I love and eat often, none of them have the wow factor that Malfroy’s Gold Wild Honeycomb has. Not only do I respect Tim Malfroy’s holistic approach to beekeeping and find his terroir focused honey amazing, but you simply can’t beat the looks on people’s faces when the honey oozes out of the comb or bursts when eaten.

So hard to choose…but with three starving boys, I’d say it’s got to be a jar of Chef Luca Ciano’s Marinara Sauce. It saves me many a midweek meal. Elevates a fab piece of grilled fish, chicken or pork, is a permanent fixture on our homemade pizzas, and makes me look way better than I should for last minute unexpected dinner guests. It’s on permanent standby in the pantry!

My craziest culinary experience…

When I was working in London, I went foraging for mushrooms with a chef that I was working with. We came across the biggest ‘chicken of the wood’ mushroom growing on a tree on the side of the road – it was as big as a dinner plate, it was huge! We picked it, took it back to the restaurant we were working at, and served it up to some of our staff. Thank goodness we didn’t serve it to customers, because the staff who ate it all ended up in hospital with carbon monoxide poisoning – from all the fumes that had been absorbed by the mushroom from the passing cars!!

Malfroy’s Gold. I just love the story behind this brand and Tim’s whole approach to it. It’s also an utter taste sensation – a surprising taste sensation. It fills your mouth in a way that I imagine the magical food did in Enid Blyton’s ‘Folk of the Faraway Tree’.

Queen Elizabeth I: who wouldn’t want to sit with one of the greatest female rulers in recent history? … As long as we are all equals at the table though. Paul Bocuse: The great man is the ultimate host and his love and passion for food have touched people around the globe across generations. Plus, he could always help out if I was struggling with the souffle!

More unforgettable than ‘crazy’. A two-day adventure to catch crabs on the mid-north coast before sunrise, boiled in sea water and left on ice overnight. Having never cracked crabs before, I was subject to ‘everyman for themselves’ whilst a table full of crab cracking veterans destroyed 40 blue swimmer crabs in 45 minutes.

I collect any kind of kitchen-related items. Ceramics, gadgets (smokers and pizza ovens), artworks with fish on them, platters, cocktail glasses – you name it, I’ll want to buy it! My favourite item: a toothpick holder shaped like an echidna.

My craziest culinary experience…

As a pastry chef in my early 20s (a long time ago), I was told by my Head Chef to bake a cake for our Japanese owners (@The Grape Escape North Sydney) with a very complex and detailed ‘HAPPY BIRTHDAY JU KON CHUN’, which was to be piped out in Japanese. Well, I baked an amazing cake, iced the cake, decorated with chocolate leaves etc. and piped out the wording and popped it in the fridge. All was good but as I was getting it out that night and placed it on a bench, I hurriedly went to pick one bamboo skewer from the top self (just over the cake) and the whole container of skewers fell over and ploughed into the cake. Well, the cake looked like a porcupine with hundreds of skewers piercing the top and side of the cake. The Japanese writing was destroyed and as my Chef said, looks like Chinese symbols now…

In Venice, on the beach island of Lido, there’s a little Agriturismo where you just sit in the courtyard of this beautiful old house, and an Italian Nonno toddles around topping up your wine while Zucchini flowers straight from the garden, fresh seafood caught right outside, comes to the table. There’s no menu and no time-limited sittings, so you are sat for hours just eating and drinking your body weight in Italian food, never knowing (or wanting) it to ever stop.
