Langres is a French cow’s milk cheese that originated from the plateau of Langres in the region Champagne-Ardenne, France. Surrounded by a white penicillium rind, the central pate is soft and crumbly, and appears creamy in colour. It is a well-balanced cheese with a fruity taste. It looks great on the cheeseboard and goes well with a salad, red wine or champagne. Langres was declared CDO (Certified Designation of Origin) in 1991 then PDO (Protected Designation of Origin) in 2009. Langres was originally made at the actual farms using warm cow’s milk poured into terra cotta moulds called “fromottes”. Once flipped, the cheese had to dry on lime tree leaves and then be matured on oat straw. A Langres cheese is a marvellous cheese to finish your meal! It is also an ideal addition to starters, main courses or snacks. Wine Pairings include (1) Opt for a Gevrey-Chambertin (2) Choose a dry white wine, such as a Pouligny-Montrachet.
