Made from red seaweed, Iota is used in the food industry to gel, thicken and stabilise. Iota forms soft and elastic gel with calcium. Disperse in cold solution before heating to 80c to hydrate and activate. Iota will begin setting at 70c and can be remelted by bringing it to above 85c.For high sugar solutions, add sugar after heating. Usage: Thicken – 0.02-1%, Basic Gelling – 1.5-2%. Freeze and thaw stable. Also known as E407.
