On harvesting the fronds are washed in salted water, then salt preserved using a traditional Japanese method, during a short season from Jul/Aug to early spring. Aided by refrigeration, these fronds have a long shelf-life. A stable product, quite safe to keep unrefrigerated for a few hours – so don’t panic if left on your bench during service. To use, wash off the salt and then blanch until bright green in colour. Great for miso, dashi, kimchi, salads, adding to stocks and braises.
