Nestled down in their dairy on the western slopes of the Pyrenees’s mountains the Etchelecu family has been producing authentic sheep’s and goat’s milks cheese for over 30 years. Maturated for a minimum of three months these pint sized truckles are repeatedly turned and rubbed with locally produced pimento. This traditional production step protects the cheese from unwanted moulds and assists the cheeses to develop its unique mottled rind. Nutty, yet sweeter in taste than Ossau Iraty, this cheese is an excellent match with medium bodied reds such as tempranillo.
