The Sardina Pilchardus variety of pilchards are preserved using fresh and Traditional methods. They are cleaned by hand, one by one, and fried in virgin olive oil. Preserved pilchards, like Ortiz White tuna, have a flavour which improves with the years, becoming more tender and delicate.
