Nuruk Jang is a liquid salt fermented with Koji and is five times more salty than soy. The sauce is beautiful brushed on meat, often being used as a tenderiser because it has a completely colourless application. It is also suitable on fish or used on salad. Try this with the Jeju citrus vinegar, mixed with olive oil as a dressing – it’s incredible!
