This stretched curd cow’s milk cheese comprises of a thin layer of mozzarella hand knotted around a lush, creamy interior of stracciatella (cream-soaked mozzarella). Serve with a drizzle of olive oil, or use to top a salad of tomatoes or stone fruit. Made in Marrickville, NSW.
